For all of time, this has been my favorite (summertime) dessert. You may see the ingredients and be all like "I don't like coconut/almond/the taste of the most delicious thing ever, so I won't like this". Don't even think about it. The only, only excuse I will accept is if you're allergic to almonds.
I didn't think to take a picture when I first made it, so all I have for you is what is left. And frankly, I can't believe that little bit has lasted this long. Post-picture, it definitely went back into the freezer smaller than when it came out.
Grandma's Rice Chex Ice Cream Dessert
2 ½ cups crushed Rice Chex
1 cup brown sugar
1 cup coconut
1 pkg. slivered almonds
½ cup butter
Toast almonds in butter ; then mix with first 3 ingredients
Pat ½ mixture in 9x13 pan
Spread vanilla ice cream (1/2 gallon) on top of mixture. (I cut away the cardboard container and slice the ice cream into 1" discs).
Put rest of mixture on top of ice cream
til the eye screams,
Em
